Ingredients

Scale
  • For the batter:
    • 2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1 tablespoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 2 large eggs
    • 1 cup whole milk
    • 1/4 cup unsalted butter, melted
  • Optional add-ins:
    • 1/2 cup chopped nuts (walnuts or pecans)
    • 1/2 cup dried fruits (raisins, cranberries, or chopped apricots)
    • 1/4 cup mini chocolate chips
  • For the topping:
    • 1/2 cup granulated sugar
    • 1 tablespoon ground cinnamon
    • 3 tablespoons unsalted butter, melted

Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  • Prepare the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • Mix the wet ingredients: In a separate bowl, whisk together the eggs, milk, and melted butter.
  • Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing; the batter should still be slightly lumpy.
  • Add optional mix-ins: If using nuts, dried fruits, or chocolate chips, gently fold them into the batter at this stage.
  • Fill the muffin cups: Use an ice cream scoop or spoon to divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  • Bake the muffins: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  • Prepare the topping: While the muffins bake, mix the sugar and cinnamon for the topping in a small bowl.
  • Add the topping: When the muffins are done, remove them from the oven and let cool slightly. Brush the tops with melted butter and dip them into the cinnamon sugar mixture to coat.
  • Serve and enjoy: Serve warm or at room temperature.

Notes

You can store these muffins in an airtight container at room temperature for up to 3 days. Reheat them slightly for the best taste.
