Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
- Prepare the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Mix the wet ingredients: In a separate bowl, whisk together the eggs, milk, and melted butter.
- Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing; the batter should still be slightly lumpy.
- Add optional mix-ins: If using nuts, dried fruits, or chocolate chips, gently fold them into the batter at this stage.
- Fill the muffin cups: Use an ice cream scoop or spoon to divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake the muffins: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Prepare the topping: While the muffins bake, mix the sugar and cinnamon for the topping in a small bowl.
