- ¼ cup diced tomatoes
- ¼ cup shredded lettuce
- ¼ cup cooked rice (optional)
- ¼ cup black beans (optional)
- 2 tbsp sour cream
- 1 tbsp chopped fresh cilantro (optional)
Instructions
Step 1: Marinate the Chicken
- In a bowl, mix olive oil, lime juice, chopped chipotle peppers, garlic, smoked paprika, cumin, salt, and black pepper.
- Add the chicken breasts to the marinade, coating them well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for extra flavor).
Step 2: Grill the Chicken
- Preheat a grill or grill pan to medium-high heat.
- Cook the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Remove from heat and let it rest for a few minutes before slicing into thin strips.
