For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper

For the Chipotle Ranch Sauce:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp ranch seasoning mix
  • 1 chipotle pepper in adobo sauce
  • 1 tbsp lime juice

For the Burrito:

  • 2 large flour tortillas
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup diced tomatoes
  • ¼ cup shredded lettuce
  • ¼ cup cooked rice (optional)
  • ¼ cup black beans (optional)
  • 2 tbsp sour cream
  • 1 tbsp chopped fresh cilantro (optional)

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix olive oil, lime juice, chopped chipotle peppers, garlic, smoked paprika, cumin, salt, and black pepper.
  2. Add the chicken breasts to the marinade, coating them well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for extra flavor).

Step 2: Grill the Chicken

  1. Preheat a grill or grill pan to medium-high heat.
  2. Cook the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  3. Remove from heat and let it rest for a few minutes before slicing into thin strips.

Step 3: Make the Chipotle Ranch Sauce

  1. In a blender or food processor, combine mayonnaise, sour cream, ranch seasoning, chipotle pepper, and lime juice.
  2. Blend until smooth and creamy. Adjust seasoning if needed.

Step 4: Assemble the Burrito

  1. Lay a large flour tortilla on a flat surface.
  2. Spread a spoonful of chipotle ranch sauce in the center.
  3. Add grilled chicken slices, shredded cheese, diced tomatoes, lettuce, and any optional ingredients like rice or beans.
  4. Drizzle with more chipotle ranch sauce and top with sour cream and cilantro.

Step 5: Wrap and Serve

  1. Fold in the sides of the tortilla and roll it up tightly.
  2. Optional: Lightly toast the burrito in a skillet for 1-2 minutes on each side to make it crispy.
  3. Slice in half and enjoy!

Notes

Make it Healthier: Use whole wheat tortillas and Greek yogurt instead of sour cream for a lighter version.
