Ingredients
Scale
Main Ingredients:
- 1 lb ground beef (80/20 or lean)
- 4 medium russet potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth (or more for desired consistency)
- 1 cup whole milk (or heavy cream for a richer texture)
- 1 can (10.5 oz) condensed cream of mushroom soup (optional, for extra creaminess)
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 cup shredded cheddar cheese (optional, for topping)
Seasonings:
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon oregano
- 1 bay leaf
Optional Add-ins:
- 1 cup corn or peas (for extra veggies)
- ½ cup cooked bacon crumbles (for smoky flavor)
- ½ teaspoon red pepper flakes (for heat)
Instructions
- Cook the Beef: In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease if necessary.
- Sauté Aromatics: Add diced onion, garlic, carrots, and celery. Cook for 3-4 minutes until the onions become translucent.
- Add Potatoes & Broth: Stir in diced potatoes, beef broth, salt, pepper, paprika, thyme, oregano, and the bay leaf. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until the potatoes are tender.
- Make It Creamy: Stir in milk (or heavy cream) and cream of mushroom soup, mixing well. Let it simmer for another 5 minutes.
- Final Touches: Remove the bay leaf, then taste and adjust seasonings. If using cheese, stir in ½ cup for a cheesy version or sprinkle on top before serving.
- Serve & Enjoy: Ladle into bowls, garnish with shredded cheese, fresh parsley, or bacon crumbles. Serve warm with crusty bread or crackers.
Notes
- Thicker Soup? Mash some of the potatoes or add 1 tablespoon cornstarch mixed with 2 tablespoons cold water.
- Make It Lighter: Use ground turkey instead of beef and swap whole milk for low-fat milk.
