Ingredients
For the Chocolate Shell:

For the Pistachio Filling:
- 200g Unsalted Pistachios (shelled) – Toasting the pistachios enhances their natural flavor.
- 100g Sweetened Condensed Milk – This adds creaminess to the pistachio filling.
- 2 Tablespoons Butter – Butter ensures the filling is smooth and rich.
- 1 Teaspoon Vanilla Extract – Vanilla adds warmth and complexity to the filling.
- Pinch of Salt – A small amount of salt balances the sweetness and enhances the flavor of the pistachios.
Instructions
Step 1: Prepare the Pistachio Filling
Begin by toasting the pistachios in a pan over medium heat until they become fragrant and lightly browned. This will enhance their flavor and bring out the natural oils. Once toasted, allow the pistachios to cool, then grind them into a fine powder using a food processor.
In a medium saucepan, melt the butter over low heat, then stir in the ground pistachios, sweetened condensed milk, vanilla extract, and a pinch of salt. Cook this mixture over medium heat, stirring constantly until it thickens. Once thickened, remove from heat and let it cool before using it as the filling for the bars.
Step 2: Melt the Chocolate
Melt the dark chocolate using a double boiler or microwave. If microwaving, heat the chocolate in 30-second intervals, stirring between each session to avoid burning the chocolate.
Step 3: Mold the Chocolate Bars
Using a silicone mold, pour a thin layer of the melted chocolate into each cavity, making sure to coat the sides evenly. Place the mold in the refrigerator for 10-15 minutes, allowing the chocolate to harden slightly.
Once the chocolate has set, spoon the cooled pistachio filling into the center of each mold. Cover the filling with another layer of melted chocolate and smooth the top with a spatula. Return the mold to the refrigerator for another hour to allow the bars to set completely.
