Ingredients
Scale
For the Meatloaf Base:
- 2 lbs ground beef (80/20 blend for best flavor)
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs
- 1 small onion, finely chopped
- ½ cup bell peppers, finely diced (any color)
- ½ cup mushrooms, finely chopped (optional)
- 2 cloves garlic, minced
- ½ cup milk
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
For the Toppings:
- 1 ½ cups shredded cheddar cheese (or a cheese blend)
- 6 slices cooked bacon, crumbled
- 1 cup mashed potatoes (optional, for a loaded-style casserole)
- 1 tbsp chopped parsley (for garnish)
For the Sauce:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
Step 2: Prepare the Meat Mixture
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, bell peppers, mushrooms, garlic, milk, Worcestershire sauce, salt, black pepper, Italian seasoning, and smoked paprika.
- Mix until just combined (avoid overmixing, which can make the meatloaf tough).
Step 3: Assemble the Casserole
- Spread the meat mixture evenly into the prepared casserole dish, pressing it down to form a flat, compact layer.
- In a small bowl, mix the ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Spread this sauce evenly over the top of the meat mixture.
Step 4: Bake the Casserole
- Bake uncovered for 40-45 minutes, or until the meat reaches an internal temperature of 165°F (74°C).
- Remove from the oven and drain any excess grease carefully.
Step 5: Add the Toppings
- Sprinkle the shredded cheese evenly over the baked meatloaf base.
- Add the crumbled bacon on top.
- (Optional) If using mashed potatoes, spread them over the meat before adding cheese and bacon.
Step 6: Melt the Cheese & Serve
- Return the casserole to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let it rest for 5 minutes, then garnish with chopped parsley.
- Slice and serve warm!
