Description
French Onion Meatloaf is a flavorful twist on the classic meatloaf, infused with the rich, sweet taste of caramelized onions. This dish brings the comforting flavors of French onion soup into a juicy and tender meatloaf, topped with a savory glaze. Perfect for a cozy family dinner, this meatloaf pairs wonderfully with mashed potatoes and roasted vegetables.
Ingredients
For the Meatloaf:
- 1 ½ lbs ground beef (80/20 blend for juiciness)
- 1 cup caramelized onions (see instructions below)
- ¾ cup breadcrumbs (panko or regular)
- 2 large eggs, beaten
- ½ cup beef broth or milk
- 2 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded Gruyère or Swiss cheese (optional for stuffing)
For the Glaze:
- ½ cup ketchup or BBQ sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
For the Caramelized Onions:
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp sugar (optional, to speed up caramelization)
Instructions
Step 1: Caramelize the Onions
In a skillet, melt butter and heat olive oil over medium-low heat. Add the sliced onions, sprinkle with salt, and stir occasionally. Cook the onions slowly for 40-60 minutes, until they turn a deep golden brown. If they begin to stick, add a splash of water. Once done, set the onions aside.
Step 2: Prepare the Meatloaf Mixture
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine ground beef, breadcrumbs, eggs, broth (or milk), Worcestershire sauce, garlic powder, onion powder, thyme, salt, and pepper. Mix gently to avoid overworking the meat. Then fold in the caramelized onions and shredded cheese, if desired.
Step 3: Shape and Assemble the Meatloaf
Line a baking sheet with parchment paper or grease a loaf pan. Shape the meat mixture into a loaf and place it on the prepared baking sheet or in the pan.
Step 4: Apply the Glaze
In a small bowl, combine ketchup, Worcestershire sauce, brown sugar, and Dijon mustard. Brush the glaze generously over the top of the meatloaf.
Step 5: Bake
Bake for 60-70 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C). Once done, let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- Meat Selection: Use 80/20 ground beef for the best balance of flavor and moisture.
- Cheese Option: Gruyère or Swiss cheese adds an extra creamy, cheesy center, similar to French onion soup.
