For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt

For the Hot Honey Sauce:

  • ¼ cup honey
  • 2 tbsp hot sauce (adjust to taste)
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ¼ tsp red pepper flakes (optional for extra heat)

For the Bowl Base:

  • 1 cup cooked brown rice (or cauliflower rice for low-carb)
  • 1 medium sweet potato, peeled and diced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

For the Toppings (Optional):

  • ½ cup shredded carrots
  • ½ cup sliced cucumbers
  • ¼ cup chopped green onions
  • 1 tbsp sesame seeds
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Rub the chicken breasts (or thighs) with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
    • Heat a skillet over medium-high heat and sear the chicken on both sides for about 2-3 minutes until golden brown.
    • Transfer the chicken to the oven and bake for 15-20 minutes, or until cooked through and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
  2. Make the Hot Honey Sauce:
    • In a small saucepan over medium heat, combine honey, hot sauce, apple cider vinegar, garlic powder, and red pepper flakes (if using).
    • Stir until the sauce is heated through and slightly thickened. Remove from heat and set aside.
  3. Prepare the Bowl Base:
    • While the chicken is baking, toss the diced sweet potatoes with olive oil, salt, and pepper.
    • Spread them out on a baking sheet and roast in the oven for 20-25 minutes, flipping halfway through, until golden and tender.
    • Cook the brown rice (or cauliflower rice) according to the package instructions.
  4. Assemble the Bowls:
    • Start with a base of brown rice or cauliflower rice in each bowl.
    • Top with roasted sweet potatoes and sliced chicken.
    • Drizzle the hot honey sauce over the chicken.
    • Add your choice of toppings: shredded carrots, sliced cucumbers, chopped green onions, sesame seeds, and fresh cilantro or parsley.

Notes
