  • 2 large chicken breasts or thighs

  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the Sauce:

  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped

For the Pasta:

  • 300g (10 oz) penne or fettuccine pasta
  • 1 tbsp olive oil (for pasta water)
  • Salt for boiling water

Vegetables:

  • 1/2 cup bell peppers (mixed colors), thinly sliced
  • 1/2 cup onions, thinly sliced
  • 1 tbsp olive oil

Garnish:

  • Fresh parsley or thyme, chopped
  • Additional grated Parmesan

Instructions

  1. Cook the Chicken:
    • Season the chicken breasts with garlic powder, onion powder, paprika, thyme, salt, and pepper.
    • Heat olive oil in a skillet over medium heat. Cook the chicken for 6-8 minutes per side until golden and fully cooked. Remove and set aside.
  2. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain, toss with a little olive oil, and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, heat olive oil over medium heat. Sauté bell peppers and onions for 3-4 minutes until tender. Remove and set aside.
  4. Prepare the Sauce:
    • In a saucepan, combine heavy cream, Parmesan cheese, oregano, basil, and red pepper flakes. Heat over low heat, stirring continuously, until the cheese melts and the sauce is smooth.
  5. Combine Everything:
    • Add the cooked pasta to the sauce, tossing to coat evenly. Stir in the sautéed vegetables. Slice the chicken and place it on top.
  6. Garnish and Serve:
    • Garnish with chopped parsley or thyme and extra Parmesan cheese. Serve warm and enjoy!
