Whether you’re a chocolate lover or just want to try something new, these brookies will hit the spot!

Ingredients

Scale

For the Brownie Layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Cookie Layer:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  • Prepare the Brownie Batter:
    • In a medium bowl, whisk together the melted butter and sugar.
    • Add eggs and vanilla, stirring until combined.
    • Sift in cocoa powder, flour, salt, and baking powder. Stir until the mixture is just combined. Avoid overmixing.
    • Pour the brownie batter into the prepared pan and spread evenly.
  • Prepare the Cookie Dough:
    • In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
    • Add the egg and vanilla extract, and mix until smooth.
    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the butter mixture.
    • Stir in the chocolate chips.
  • Assemble the Brookies:
    • Drop spoonfuls of the cookie dough onto the brownie batter. Spread the dough gently with a spatula, allowing some brownie to show through.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Cool and Serve:
    • Let the brookies cool in the pan for 15-20 minutes. For clean cuts, let them cool completely before slicing into squares.

Notes

Don’t Overmix: Overmixing the brownie batter or cookie dough can make the brookies dense. Mix just until ingredients are combined.
