Rotel Dip Recipe

  • Author: ARLINDA
  • Total Time: 25 minutes
  • Yield: 8 servings 1x

Description

Rotel Dip is a creamy, cheesy, and slightly spicy dip perfect for parties, game days, or casual gatherings. This versatile dish combines melted Velveeta cheese, flavorful Rotel tomatoes, and your choice of ground beef or sausage to create an irresistible appetizer. You can easily customize this dip with different meats, add-ins, or make it vegetarian. Serve it hot with tortilla chips, crackers, or veggies for dipping, and watch it disappear quickly!

Ingredients

Scale
  • 1 pound ground beef or sausage (or both)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (mild, original, or hot)
  • 1 pound (16 oz) Velveeta cheese, cubed
  • 1/4 cup milk (optional, for thinning)
  • Tortilla chips, crackers, or veggies, for serving

Optional Add-ins:

  • 1/4 cup diced jalapeños (for extra heat)
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup chopped cilantro (for garnish)
  • 1/2 cup cooked and crumbled bacon (for smoky flavor)
  • 1/2 cup black beans or corn (for heartier dip)

Instructions

  1. Cook the Meat: In a large skillet over medium heat, cook the ground beef or sausage until browned, breaking it into small pieces. Drain the excess fat.
  2. Add Rotel Tomatoes: Stir in the can of Rotel tomatoes with green chilies. Let the mixture simmer for about 5 minutes to allow the flavors to meld together.
  3. Melt the Cheese: Reduce the heat to low and add the cubed Velveeta cheese to the skillet. Stir constantly until the cheese melts and the mixture is smooth. If the dip is too thick, stir in milk to reach your desired consistency.
  4. Serve: Transfer the dip to a serving dish, slow cooker, or bowl. Garnish with green onions, cilantro, or jalapeños if desired. Serve hot with tortilla chips, crackers, or veggies.

Notes

Make Ahead: You can prepare Rotel Dip up to a day in advance. Store it in an airtight container in the fridge and reheat on the stove or in a slow cooker before serving.
