Instructions

  • Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels.
    • Season both sides of the chicken with salt, pepper, smoked paprika, garlic powder, and onion powder.

  • Sear the Chicken:
    • Heat a large skillet over medium-high heat and add the vegetable oil.

  • Make the Gravy:
    • In the same skillet, reduce the heat to medium. Add the butter to the skillet. Once melted, add the sliced onion.
    • Sauté the onion for 8-10 minutes, or until caramelized and golden.
    • Add the minced garlic and sauté for an additional minute, until fragrant.
    • Sprinkle 2 tablespoons of flour over the onions and stir for about 1-2 minutes to cook out the raw flour taste.
    • Slowly whisk in the chicken broth, ensuring there are no lumps. Continue whisking until the gravy is smooth.
    • Stir in the heavy cream and allow the mixture to come to a simmer. Let it thicken for about 3-5 minutes.
  • Smother the Chicken:
    • Return the chicken pieces to the skillet, placing them skin-side up in the gravy.
    • Spoon some gravy over each chicken piece, reduce the heat to low, cover the skillet, and let it simmer for about 30-35 minutes, or until the chicken is fully cooked and tender.
  • Finish and Serve:
    • Once the chicken is cooked through, remove the skillet from the heat.
    • Garnish with fresh thyme if desired.
    • Serve the smothered chicken hot, with mashed potatoes, rice, or buttered bread to soak up all the delicious gravy.
