Description
A hearty and comforting casserole with layers of seasoned ground beef, tender potatoes, onions, and a creamy mushroom soup base. This dish is a perfect example of how simple ingredients can come together to create a filling, budget-friendly meal. It’s great for family dinners or when you need to prepare a dish in advance.
Ingredients
- 1 lb ground beef
- 4–5 medium potatoes (peeled and sliced thinly)
- 1 large onion (diced)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese (optional for topping)
- 1/2 cup breadcrumbs (optional for topping)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1 tablespoon olive oil (for browning beef)
- 1/2 cup beef broth (optional, for extra moisture)
Instructions
-
Prepare the Ground Beef:
In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces. Season with garlic powder, salt, and pepper. Drain any excess fat. -
Layer the Casserole:
Preheat the oven to 375°F (190°C). In a greased 9×13-inch baking dish, layer the sliced potatoes evenly at the bottom. Then, add the browned ground beef as the next layer, followed by the diced onion. -
Add Soup and Optional Ingredients:
In a bowl, mix the cream of mushroom soup with the beef broth if using, to create a slightly thinner consistency. Pour this mixture over the beef and potatoes. -
Top the Casserole:
Sprinkle shredded cheese and breadcrumbs evenly over the top (if using). The cheese will melt and create a golden crust, while the breadcrumbs will add crunch. -
Bake the Casserole:
Cover the casserole with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender. Remove the foil for the last 10 minutes of baking to allow the cheese and breadcrumbs to crisp up. -
Serve and Enjoy:
Allow the casserole to rest for 5-10 minutes before serving. Slice into squares and enjoy this comforting dish!
Notes
- Customization Options: Feel free to add other veggies like bell peppers, peas, or carrots to the casserole. You can also switch out the cream of mushroom soup for other creamy soups like cream of chicken or cream of celery.
- For a Healthier Version: Use lean ground turkey or chicken instead of beef, and opt for a low-sodium soup or homemade sauce for better control over the ingredients.
- Make it Gluten-Free: Use gluten-free breadcrumbs or omit the breadcrumbs altogether.
- Freezer-Friendly: This casserole can be assembled ahead of time and frozen for up to 3 months. When you’re ready to bake, simply let it thaw in the fridge overnight and then bake as directed.
