Ingredients

Scale

For the Brownie Layer:

  • 1/2 cup (115 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup (65 g) all-purpose flour

For the Cookie Layer:

  • 1/2 cup (115 g) unsalted butter, softened
  • 1/3 cup (65 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (175 g) chocolate chips

Instructions

  • Prepare the Baking Pan:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.

  • Make the Brownie Layer:

    • In a large bowl, whisk together the melted butter, sugar, cocoa powder, and salt until smooth.
    • Stir in the vanilla extract and eggs, mixing well after each addition.
    • Fold in the flour until just combined. Do not overmix.
    • Spread the brownie batter evenly into the prepared baking pan.
  • Make the Cookie Layer:

    • In another mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
    • Add the vanilla extract and egg, mixing until smooth.
    • Gradually add the flour, baking soda, and salt until just combined. Fold in the chocolate chips.
    • Drop spoonfuls of the cookie dough evenly over the brownie batter, then carefully spread it out to create an even layer.
  • Bake:
Place the baking pan in the preheated oven and bake for 25-30 minutes, or until the cookie layer is golden brown and a toothpick inserted into the center comes out with only a few moist crumbs.

  • Cool and Serve:
Let the brookies cool completely in the pan before slicing them into bars. Enjoy!

Notes

  • Avoid Overmixing: Overmixing the batters can make the brookies dense. Stir until ingredients are just combined.
  • Storage: Store brookies in an airtight container at room temperature for up to a week or freeze individually wrapped pieces for up to three months.
  • Variations: Add a handful of chopped nuts or swirl in caramel for extra flavor.
